Makes approximately 16
  • Mortimer chocolate powder, a teaspoon per pancake
  • 25g butter, melted
  • 225g self-raising flour
  • ½ teaspoon salt
  • 1 tablespoon caster sugar
  • 1 egg
  • ½ pint (300ml) milk

You will need to cook these in a griddle pan or heavy frying pan.

Method

First make up the batter. Sift the flour and salt into a large mixing bowl and stir in the sugar. Make a hole in the middle and add the egg and half the milk. Beat with a large whisk. Add the rest of the milk and beat until smooth.

Brush the pan with a little of the melted butter and heat. The pan needs to be fairly hot to produce a good brown colour, but not too hot otherwise the pancake will burn.

Drop heaped tablespoon of the batter into the pan. Cook until bubbles show on the surface about 2 minutes. Then turn the pancake over. Now brush with a little melted butter and sprinkle a teaspoon of chocolate over each pancake.

It will take about another 2 minutes to cook the underside, by which time the chocolate powder will have melted.

Serve straight away.
