Vegan 2 Minute Microwave Chocolate Cake

A vegan chocolate cake made in the microwave in under 2 minutes on a plate with vanilla ice cream and icing sugar

Our 2 minute microwave chocolate cake recipe is not only so quick and easy to make, but also vegan and allergen free!

Here’s the recipe:

Ingredients:

50g Mortimer Chocolate 30% West African Drinking Chocolate

115g plain flour

150g caster sugar

1/2 tsp bicarbonate of soda

1/2 tsp baking powder

125ml oat milk

60ml vegetable oil

125ml boiling water

Method:

  1. Combine all the ingredients together except for the boiling water- ensure the moisture is smooth
  2. Slowly add in the boiling water bit by bit whilst stirring, until all the ingredients are evenly combined *note the mixture will be very thing*
  3. Pour the mixture into ramekins and place one in the microwave for 2 minutes, be sure to watch the cake so it doesn’t burn
  4. Sprinkle some icing sugar over the cake and serve with vegan ice cream
